In the freeze drying process, food is first quickly brought to very cold temperatures, as far as 10 to 50 degrees below zero Fahrenheit. This frozen food is then exposed to a complete vacuum and slowly warmed up. As soon as the water starts to unfreeze it instantly turns to vapor. The end result food that's the same shape and size as it's original form but devoid of moisture.
